| Cinnamon
Crisps Ingredients 2 cups melted
butter 2 cups brown sugar (loosely packed) 1 cup white granulated sugar 2
beaten eggs (whip with fork) 2 tsp vanilla 1 tsp cinnamon 1 tsp baking
soda 1 tsp cream of tartar (critical) 1 tsp salt 4-1/4 cups white flour
(not sifted)
Rolling Mixture 1/2 cup sugar 1 tsp cinnamon
Instructions
Preheat oven to 325. Melt butter. Add sugars and mix. Cool to room temp
while you beat the eggs and then mix them in. Add vanilla, cinnamon, baking
soda, cream of tartar, and salt. Mix well. Add flour in increments, mixing
after each addition. Roll dough into walnut size balls. (walnuts with the shells
on!) If dough is too sticky, chill for 1 hour. Roll balls in the cinnamon
sugar mixture. Place on greased cookie sheet and flatten with juice glass
or spatula. Bake 10 to 15 minutes. Cookies should be golden brown around
the edges.
The cookies are wonderfully thin and crispy!
