Bruschetta Pizza

Ingredients

1 thin crust Boboli
3 tomatoes, seeded and chopped
3 cloves garlic, run through a garlic press
1 shallot, minced 2 tablespoons extra virgin olive oil
1/3 cup grated or shredded parmesan cheese
1/4 cup fresh basil, washed and torn (I like lots!)
1/2 cup mozzarella

Instructions

Preheat oven to 400 degrees F.
Brush olive oil onto Boboli.
Spread garlic over olive oil.
Top with ingredients in the following order: Parmesan cheese, basil, tomatoes, shallots, and mozzarella.
Bake 10 to 12 minutes or until cheese is bubbly and golden brown on the edges.
Cut into squares and serve immediately.

Servings

Serves 5-6

I use this as an appetizer. It would be great as a main course with a salad. Plan on serving 3 to 4 depending on their appetites!
