Best Ever Oatmeal Cookies
Ingredients
1/2 cup butter, softened
1/2 cup shortening
1 cup firmly packed brown sugar
1 cup sugar
1 teaspoon vanilla
2 eggs, beaten
3 cups quick cooking oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
Instructions
In large mixer bowl, cream butter, shortening and
sugars until light and fluffy. Beat in vanilla and eggs. Combine
dry ingredients. On low speed, gradually add dry ingredients until
thoroughly combined. Drop by heaping tablespoonfuls 2 inches apart
onto ungreased baking sheets. Bake in a preheated 350 F oven until
golden brown (13-15 minutes). Cool cookies on baking sheets 1 minute.
Remove to wire rack to cool. Store in tightly covered container.
Amount: 3 1/2 dozen
Variations: Any of the following may be added
to cookie dough: 1 cup coconut, 1 cup chopped nuts, 1 cup dried
apples or apricots, 12 ounce package M&M's Mini Baking Bits,
12 ounce package chocolate chips, 1 cup raisins and 1 teaspoon cinnamon,
or 1 teaspoon grated orange peel and 1 cup dried cranberries or
cherries.
Note: Some cookie variations may require
additional baking time. For large cookies, use 1/4 cup cookie dough
per cookie. Bake 17-18 minutes.
Amount: About 22 cookies
Tip: For a crisper cookie, press dough on
baking sheets with tines of fork. Store in loosely covered container.
